I used to think that making homemade pesto was super hard. Pesto has pine nuts in it, that has to make it hard. I mean right, nope it's super easy. All you need is a blender. Pesto is such a light and bright pasta sauce, and you can put it on any type of pasta. Penne happens to be one of my favorite types because the sauce gets inside the pasta as well as outside. Another tip is to tear the basil rather than chopping it. Why you ask? You lose some of the oils and flavor on your counter top.
To a blender, add 1 cup of torn fresh basil, 3/4 cup of grated Parmesan, 3 TBS of pine nuts, 2 tsp of minced garlic, and 1/3 cup of Extra Virgin Olive Oil. Blend until smooth-ish, then add salt and pepper to taste. I use a blender rather than a food processor because it chops up the pine nuts better. Spoon the pesto over your favorite pasta, and then grate some fresh Parmesan on top. Enjoy!
