Once again, I love pasta. It is always my quick go to dish. This is always a staple at my house, and it's always good.
In a skillet, heat 2 TBS of olive oil and 2 tsp of minced garlic, and 1 LB of either mild or sweet Italian sausage without the casings. Once the sausage has browned, add 1 TBS of rubbed sage, and 1 cup of heavy whipping cream to the sausage and cook for about 5 minutes. Next add a can of chopped tomatoes with basil and oregano. Stir the sausage, and cook for another 15 minutes.
While the sausage is cooking, add fettuccine to boiling salted water, turn the heat to low and cook for 12 minutes. With a measuring cup save 1 cup of the pasta liquid. Drain the pasta, then add the pasta to the skillet with the sausage, and add enough of the pasta water to make it creamy. Grate about 1 cup of fresh Parmesan into the skillet and stir. Enjoy!
