Creamy Lemony Shrimp and Scallops over Cavatappi




OK so the only hard part about this recipe is the fact that you will have to have several different pans. If that bothers you then don’t start this, but I promise you’ll have a great dinner.


In Pan #1 you are going to want to add 2 TBS of olive oil and 2 TBS of butter and 1tsp of minced garlic. Only let the garlic cook for 1 minute because you do not want your garlic to burn. Next add 5 pieces of shrimp and let it cook for about five minutes. You want the shrimp to be translucent. Squeeze 1/2 of a lemon to the pan, and add another TBS of butter .Let the shrimp get good and yummy for about 5 minutes, and them take the pan off of the heat.


Heat Pan #2 on medium high until hot. Melt 2 tablespoons of butter then add about four scallops to the pan. I have found if you put a little bit of sugar on top of each scallop it helps the scallops to sear a little bit better. Sear them for about three minutes on each side and set in the pan with the yummy shrimp.


In Pan #3 steam some asparagus for about 5 minutes. Just long enough for the asparagus to be tender but still have a bite.


OK this is your last pan. In Pan #4 make the Alfredo Sauce. Just add 2 tablespoons of butter and a cup of heavy cream and about a half a cup of grated Parmesan cheese. Let the sauce bubble. Add the contents of the pan with the shrimp and scallops to the Alfredo Sauce along with the asparagus.


Cook your pasta. I like to use the Cavatappi because it just looks so pretty. Once your pasta is cooked and drained add it to your pan with the sauce. Grate some fresh Parmesan on top. then drizzle a bit of truffle oil. This will really brighten your pasta. But be careful not to be heavy handed. A little goes a long way. Enjoy!!!
