Don't you just love a recipe that is short and sweet? Well here it is.
In a bowl toss 2 tsp of minced ginger, (I am loving the squeeze tube, rather than actually grating the ginger), the green part of 2 sliced green onions, the juice of 1 lime, 1 chopped small red onion, 1 diced pineapple , 1/2 a minced Poblano pepper, and a splash of oil. If you want to be fancy, you can always grill your pineapple. Enjoy!
