Mississippi Mud Cookies


I'm sorry that I’m not as excited about sweets. But some of you are. These are for you.


In a mixer, blend 1 stick of butter and 1 cup of sugar for about 2 minutes. Add 2 eggs, one at a time to the sugar mixture. Blending between each egg. Next add 1 tsp of vanilla.

In a microwave safe dish, melt 1 cup of semi sweet chocolate chips in 30 second intervals, this keeps them from burning. Add the melted chips to the dough. Then add 1 tsp of baking powder, 1/2 tsp salt, and 1 1/2 cup of flour to the dough, and combine. Lastly add 3/4 cup of milk chocolate chips and 1 cup of chopped pecans.


Preheat your oven to 350 degrees. Line your cookie sheets with parchment paper. Drop 10

1 TBS of dough onto the cookie sheet, and bake for 3 minutes. Pull out the cookie sheets and press 3 mini marshmallows onto the center of each cookie. If you put the marshmallows on at the beginning, they spread off of the cookie. Put the pan back into the oven for 9 more minutes. Let the cookies cool on a cooling rack. Enjoy!!
