Lily's Favorite Grilled Corn with Garlic Lime Butter

I love to eat fresh corn. And I only like the white corn. Its sweeter and not as chewy. Take 4 ears of corn and pull down the husks, but do not pull them all of the way off. With the husks down pull out the silks. It took me a long time to realize that it is so much easier to get the silks off while the husks on. Crazy isn't it. Soak the corn in water and weigh the corn down in the water for about 1 hour. Shake the excess water off and place the corn on a medium high grill for about 20-30 minutes. Or until the corn is tender. Make sure that you keep a water bottle nearby because those suckers can catch on fire if you aren't careful. Take the corn off of the grill, brush with the butter and sprinkle with Parmesan cheese. Not the fancy kind, but the kind that's already grated. Don't let that offend your sensibilities.


Ok, so previously in the evening while you are soaking the corn and having a glass of wine, you needed to make the butter. Mix together in a cuisinart 1 stick of very softened butter, 2TBS of minced garlic, 2TBS of fresh chopped chives, and 1/2 of a 1/2 a chopped Poblano pepper. I promise there isn't a lot of heat. I do not like super spicy things. Enjoy.
