I love a good salad. And adding pine nuts can always kick it up a notch. I have cooked these in honey. It's super easy.
In a small skillet, add 1/2 cup of pine nuts and about 1 TBS honey. Cook the pine nuts on low until they turn a golden brown. Then set them on a plate to cool. Now mix together 1/4 cup of olive oil, 1 tsp Dijon mustard, 1 TBS stone ground mustard, and 1 TBS apple cider vinegar. Whisk.
Grab some greens. I like to use either a Spring Mix blend or Arugula. Add to a bowl, with the dressing, goat cheese, and pine nuts. Enjoy your elegant salad.
