Any kind of nut can really dress up a salad. Let's use almonds. And you can use any greens from Arugula to Spinach. Here I have used both.
Chop up 1/2 cup of smoked almonds. Put half of the almonds in a blender with 1/2 cup of olive oil, 1/4 cup of red wine vinegar, and 1 TBS of honey. Blend this mixture on medium for 10 seconds. I have made the mistake of blending longer, and I had made almond butter. You don't want that. Pour the dressing over the greens. Add the remaining chopped almonds and some salty feta cheese to the salad. You are set. Another amazing salad.
