Maque Choux sounds intimidating, doesn't it. It's not. Its a Creole dish that contains corn, onion, and green bell peppers. That's it. Of course you can add more to create more flavor. I'm going to start by adding some bacon. Bacon makes everything taste better.
Cook 3 pieces of bacon in a skillet. I always like to cook it on low, so that it stays crisp without burning. While you are cooking your bacon, cut the corn off of 4 cobs. I like to use the white silver queen corn, because I prefer the sweeter corn. Always use fresh corn, they will have it in a package at your grocery store. Never use frozen or canned corn, it just doesn't have the same fresh flavor. In a bowl add your corn, and about 1/2 cup of heavy cream, and 1/2 cup of milk. Take the bacon, and set it aside. Chop up 1 yellow onion, and add it to the skillet with the bacon fat. Cook the chopped onion for about 3 minutes. Chop up 1 green bell pepper, and 1 red bell pepper and add these to the skillet with the onion. I always cook the onion longer because their crunch grosses me out. Cook the onion with the peppers for 3 minutes more. Add the corn mixture, 1 chopped tomato, and about 1 TBS of chopped canned green chilies, 2 TBS of butter, and 1 tsp of salt to the skillet with everything else, and cook on low for about 25 minutes. Stir occasionally. I added 1 TBS gumbo file to give it that "dirty"flavor. That's it. Super easy and super delicious.
