Black and Blue Steaks with Blue Cheese Cream Sauce


I love a good fillet, and I like them rare to medium rare. I also love a good sauce for my steak, and this is it!! And you do not have to grill, so you can cook inside all year around.

About an hour before you are going to cook your steaks, set them on the counter. This way they become room temperature. Make sure you put them to the back of the counter, so that the dogs don’t get them. Rub your steaks with olive oil and generously salt and pepper them. Pour 1 TBS of Worstershire sauce over each steak.


While the steaks are coming to room temperature, let's get to the sauce. In a small saucepan, pour about 1 cup of heavy whipping cream. Add 1/2 cup of grated Parmesan cheese. This is one of those times that you can use the canister of Parmesan cheese. Cook on low, for about 15 minutes or until it gets thick. Add about 1/4 cup of blue cheese, and continue to cook on low.


Heat a skillet to almost high. You want it to smoke. Add 4 TBS of butter. Add your steaks to the skillet. Cook the steaks for 4 minutes, adding a TBS more if Worstershire. I like to pick my steak up and swish it in the butter a couple of times. Turn steaks over and brush with olive oil. The steaks will start to crust, but the olive oil will keep it from getting too crusty.

Add 1 TBS of Wostershire to each steak. Cook for 4 minutes. Remove steaks from pan and let them rest for about 5 minutes. Cover with the Blue Cheese Cream Sauce and Enjoy!!!
