Flounder is a flaky white fish that is super easy to cook. This recipe is delicious, and it looks like you have worked harder than you did.
Preheat your oven to 425. Season 2 large fillets (about 1LB each) with salt and pepper. Not too liberally though, there is cheese in this recipe and it has salt in it as well. Mix together 1 cup of Panko bread crumbs with 1/2 cup of freshly grated Parmesan cheese. I like to use the Panko rather than regular bread crumbs because they are crunchier. Ok so normally fish and cheese do not pair well. But since this is in the breading, it will be ok. This is a time when it is better to grate your Parmesan rather than use the can, it will taste a little milder. Add 4 TBS of melted butter and 2 TBS olive oil to the Panko mixture, and sprinkle over the fish. Bake the fish for 15 minutes. See that was so easy. Enjoy!!!
